I think we all need to take a break, right? I’ve been wanting to start doing this series for a while, so let’s go. We need some fun, light reading, people. Here are five items that I’m lovin’ like a bun in the oven, within five categories that we can all say ‘Amen!’ to.
A Make-My-Life-Better Recipe.
Crock Pot Chicken Fajitas
Okay, so the name is a little deceptive. Because I have been known to grill, sauté’, and even make a freezer meal out of this gold nugget. Maybe I should title these as “Super Versatile Chicken Fajitas.” You get the idea.
- 1 yellow onion, sliced
- 3 sweet peppers, sliced
- 1 ½ pounds boneless chicken breast or thighs
- ½ teaspoon salt
- 2 tablespoons cumin
- 1 ½ tablespoons chili powder
- About ¼ cup olive oil
- Squirt of lime juice (I have been to use the juice of a whole lime)
- All.the.fajita.stuff (cilantro, cheese, avocado, salsa, sour cream, jalapenos, etc.)
Combine chicken, seasonings, lime juice, and olive oil in a gallon freezer storage bag. Marinate a bit before cooking. (Or write these directions on the bag, add the veggies in a separate bag-within-the-bag, and tuck this little treasure back in freezer for another day.) Add to crock pot, cook on low 4-8 hrs. Add veggies during the last hour of cooking for crisper veggies. (You can dump the whole mess in together at the start, but I kind of hate soggy veggies. So just wait til the end so I don’t have to think about you eating soggy, lackluster peppers and shriveled onions, okay? I also like mixing in some chopped, fresh cilantro at the last second.)
2. Worth the Read
I’ve recently finished this expose on extreme poverty in America. The book shares a history of social welfare and the policies and historical events which have impacted welfare in our country. Case studies of American families from some of the most heavily impoverished areas of the nation are followed. This book sheds a light on a serious problem going on right here under our noses, often just on “the other side of the tracks” from the homes of most of the people I know. Out of sight and out of mind, children are often starving, homeless, or existing in dangerous vulnerability.

No bad stuff, hidden vegetables, and they are so yummy! Plus, this company gives back through initiatives to feed the hungry and assists organizations like Save the Children. Fill stockings for kids in foster care!
The stockings have been provided so you just have to fill gallon zip lock bags. They will be passed out at the CASA Christmas party on December 3rd so they need to be turned in to CASA before November 30. Let me know if you’d like help delivering! Stockings are needed for: 25 Infant/toddler, 100 Boy, 100 Girl, 75 Teen Boy, 75 Teen Girls.
